

Each Oyster Social pairs Billion Oyster Project with a different NYC restaurant that participates in our Shell Recycling Program. You'll taste a half-dozen local oysters from Oysterponds Shellfish Co. prepared three ways — raw, grilled, and a chef's special preparation unique to that venue.
Between courses, hosts from BOP and the restaurant walk you through the pairings, the ecology behind each oyster, and the restaurant's role in recycling shell back to the harbor. It's equal parts education, culinary experience, and community gathering.
Seating is communal, the vibe is relaxed, and you'll leave with a deeper appreciation for what's growing beneath the surface of New York Harbor.

Every oyster shell served at our partner restaurants gets collected, cured, and returned to the harbor as substrate for new oyster reefs. The Shell Recycling Program has diverted over 15 million pounds of shell from landfills since its launch.
At each Social, you'll see this cycle up close — from the shell on your plate to the reef structures being built on Governors Island. It's a closed loop that turns dinner waste into living infrastructure.
